Happy Passover

From all of us here at Miamist we wish you a happy Passover. If you don't have any seder plans for tonight or tomorrow try Chabad on South Beach (info below). Also, we have included some of our favorite Passover recipes. The mashed potato kugel is the perfect side dish to a traditional potroast and the savory matzo farfel goes great with turkey or chicken dishes. Enjoy!

Mashed Potato Kugel

6 potatoes, pared salt & pepper, to taste
3 eggs, beaten 3 tbsp. chicken fat or oil
1/4 c. matzo or cake meal

Boil, drain and mash potatoes. Add eggs, meal and seasonings and beat until light and fluffy. Place oil in casserole and heat in over at 350 degrees. Stir into potato mixture. Turn mixture into casserole and bake at 350 degrees for one hour, until golden brown.

6 to 8 servings

Savory Matzo Farfel

2 Large onions, minced 1/4 tsp. pepper
1/4 c. oil 1 tsp. paprika
3 1/2 c. matzo farfel 1 c. chicken soup
1 tsp. salt 1 c. water

Sauté onions in oil in large skillet until tender. Add farfel and stir until lightly browned. Combine seasonings, soup and water. Add slowly to skillet and cook over low heat, stirring often, until all liquid is absorbed.

6 to 8 servings
